Honey Bear Banana Muffins are a simple and delicious snack or back-to-school breakfast. When frosted, they make a delicious cupcake treat. Enjoy!
Muffins
3c flour
1t baking soda
1t salt
1/2t baking powder
1/2t cinnamon
1/2t nutmeg
2c sugar
1c oil (canola oil is my preferred choice)
3 eggs
1T vanilla (using authentic Mexican vanilla has changed my culinary life!)
3 over ripe bananas
1/2-3/4c applesauce (my secret ingredient)
Combine all ingredients and mix until the batter is smooth. Bake at 325 for 25 minutes.
Makes 24-30 scrumptious muffins.
When cooled and we want a completely decadent treat, we frost these with a honey vanilla frosting. On a "good" day I make homeade buttercream frosting and add fresh local honey to taste. On a "not so good" day, I pop open a can of Pillsbury vanilla frosting and add whatever honey I happen to have in the pantry. Either way, it's a real flavor treat!
HINT: For those of you traveling down the adoption highway to a Central or South American destination, these muffins met favor with a group of children who have a palate for native Latin American food.
