Diners, Drive-Ins, and Dives: His and Her Potato Soup

"Oh, my favorite day!", said Pooh.

It is my prayer for each of us, that as we WAIT, we embrace everyday as our favorite day .  May we WAIT passionately.  May we WAIT with a song in our heart.  Everyday, may we shout from the rooftops,

"Today is the day that the Lord has made.  Let us rejoice and be glad in it!"


The weather forecasters in our area are calling for a blast of arctic air this weekend.  What better day than today to make a steaming pot of creamy Potato Soup.  Following is a recipe for His Potato Soup...the ingredients are rich and fat full.  After that you will see a recipe for a lighter version that I call Her Potato Soup.  It is just as delicious, but lower in fat.

His Potato Soup

4 c chicken broth
4 c peeled and cubed potatoes (approximately 4-5 medium to large potatoes)
1/4 c diced sweet onion
1/2 t seasoned salt
12 oz cream cheese, cubed

Put the potatoes and onion in a soup pot with the broth.  Bring to a boil.  Simmer until all vegetables are very soft.  Add the seasoned salt.  Add the cream cheese cubes.  Blend til thick and creamy with an immersion blender.  Add additional broth to achieve desired thickness. Serve immediately.

Her Potato Soup

4 c chicken broth
4 c peeled and cubed potatoes (approximately 4-5 medium to large potatoes)
1/4 c diced sweet onion
1/2 t seasoned salt
1/4 c margarine
1 c skim milk

Put the potatoes and onion in a soup pot with the broth.  Bring to a boil.  Simmer until all vegetables are very soft.  Add the seasoned salt.  Add the margarine and milk.  Blend til thick and creamy with an immersion blender.  Add additional broth or milk to achieve desired thickness. Serve immediately.

Serving suggestion:
Ladle the soup into a mug then top with shredded cheddar cheese, garlic croutons, and a dash of hot sauce.  I highly recommend Valentina Hot Sauce.  It is delicious!
